Crunchy Tahini Mediterranean Salad
An easy, healthy and nutritious salad that comes together in just 15 minutes. Fresh ingredients with a creamy tahini dressing.

Ingredients
- 1 cup chickpeas
- 1/2 cup cubed seedless cucumber
- 1/3 cup chopped red onion
- 1/4 cup green olives
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped pistachios
- 1 tsp dried or fresh mint
- 1 tbsp fresh dill
- 1/4 cup tahini
- 3 tbsp water
- 2 tbsp fresh lemon juice
- 2 tbsp extra virgin olive oil
- 1 tbsp maple syrup
- 1 small grated garlic clove
- 1/4 tsp sea salt
Instructions

Whisk tahini, water, lemon juice, olive oil, maple syrup, garlic, and salt in a small bowl.

In a salad bowl, combine drained chickpeas, red onions, olives, and cucumber.

Add feta, pistachios, dill, and mint.

Add two tablespoons of dressing.
