"Encocado De Pescado" (Latin Coconut Fish Curry)
An Ecuadorian dish featuring mahi mahi in a creamy coconut milk sauce. A simplified version of a traditional family favorite.

Ingredients
- 4 fillets of mahi mahi
- 1/2 tsp salt, pepper, and garlic powder
- 1 (8 oz) can coconut milk
- 1/2 red or white onion
- 2 garlic cloves, minced
- 1 roasted red pepper, minced
- Handful of fresh cilantro
- 1 tbsp fresh lime juice
- Lime wedges for serving
- Extra virgin olive oil
Instructions

Season fish with olive oil, salt, pepper, and garlic powder.

Sear fillets 3 minutes per side in a hot pan, then set aside.

Create a "refrito" by sautéing onions, garlic, and roasted red peppers for 3 minutes.

Add coconut milk and pan drippings, simmer 3 minutes, then blend into a smooth sauce.

Return sauce to pan and add lime juice.

Return fish to pan with cilantro and cover.
