Ingredients
- 3/4 cup dry couscous
- 1/4 tsp turmeric powder
- 1/2 tsp salt
- 1/2 tsp Za'atar seasoning
- 1 cup water
- 1 cup chopped colorful peppers
- 3 chopped green onions
- Handful of kalamata olives
- Handful of mixed fresh herbs (dill, parsley, mint)
- Juice of 1/2 lemon
- 1 tsp Za'atar seasoning (for dressing)
- 1 tbsp extra virgin olive oil
- Dash of honey
- Salt and pepper to taste

Combine couscous, turmeric, salt, Za'atar, and hot water in a large bowl.

Cover and rest for 10 minutes.

Uncover and fluff with a fork.

Chop green onions, peppers, and kalamata olives.

Prepare the dressing by whisking lemon juice, Za'atar, olive oil, honey, salt, and pepper.
