Rainbow Mediterranean Couscous Salad

Ingredients

  • 3/4 cup dry couscous
  • 1/4 tsp turmeric powder
  • 1/2 tsp salt
  • 1/2 tsp Za'atar seasoning
  • 1 cup water
  • 1 cup chopped colorful peppers
  • 3 chopped green onions
  • Handful of kalamata olives
  • Handful of mixed fresh herbs (dill, parsley, mint)
  • Juice of 1/2 lemon
  • 1 tsp Za'atar seasoning (for dressing)
  • 1 tbsp extra virgin olive oil
  • Dash of honey
  • Salt and pepper to taste

Instructions

    Combine couscous, turmeric, salt, Za'atar, and hot water in a large bowl.

    Cover and rest for 10 minutes.

    Uncover and fluff with a fork.

    Chop green onions, peppers, and kalamata olives.

    Prepare the dressing by whisking lemon juice, Za'atar, olive oil, honey, salt, and pepper.
